I’m Basically Rachel Ray Now

Hey hey! As you can probably tell by the title of this blog, I am doing yet another baking blog. (Oooo that has a nice ring to it…Baking Blog). Anyways, being stuck at home has caused me to bake…a lot. It’s fun and it keeps me busy. So if you read my last blog, I shared a recipe that I found on Pinterest for Peanut Butter Honey Cookies (click the link here if you want to see that recipe). I tried out another healthy recipe, that I also found on Pinterest for Peanut Butter Banana Muffins. Can you tell I like peanut butter? They are super yummy. I have been trying to eat healthier so I’ve been on the lookout for healthy recipes! If you have any, let me know in the comments I would love to try them. This recipe is from www.chefsavvy.com. Let’s get on into it.

First we have to get our ingredients together. All you need are 2 bananas (I used 1 and a half because they were really big), 2 eggs, peanut butter, maple syrup, honey, vanilla extract, baking soda and chocolate chips. Set your oven to 400 degrees.

Then, you are going to blend together all ingredients. Yes, it is that easy. So, your going to be blending you 2 bananas, 2 large eggs, 1 cup of peanut butter, 1/4 cup of syrup, 2 tablespoons of honey, 1 tablespoon of vanilla extract and 1/2 teaspoon of baking soda.

Once you mix all that together, it should look like this. That is when you mix in 1 cup of chocolate chips. Then you pour the batter into your muffin tin. Fun fact: Because there is no flour, the muffins aren’t really going to rise. I didn’t realize that when I made them. So, I would recommend pouring in a little more batter than you normally would. If not, they are going to be small, which of course is fine too. Whatever you prefer!

Bake the muffins for right around 13 minutes. I loved these muffins and they did not last very long in the house.

The Quick Instructions

Servings: About 12 muffins

Ingredients

-2 bananas

-2 eggs

-1 cup of peanut butter

-1/4 cup of syrup

-2 tablespoons honey

-1 tablespoon vanilla extract

-1/2 teaspoon of baking soda

-1 cup chocolate chips

Directions:

Preheat oven to 400 degrees. Line muffin tin

Blend together bananas, eggs, peanut butter, syrup, honey, vanilla extract and baking soda until smooth

Fold in chocolate chips

Fill muffin tins until they are about 3/4 of the way full

Bake for 13 minutes on 400 degrees

Allow muffins to cool
