Super Yummy Healthy Cookies

I’ve been trying to eat healthier lately, but it’s so hard to cut out treats and desserts completely. So, I started looking for some recipes for healthier versions of some of my favorite desserts. On Pinterest, I saw a recipe for healthy peanut butter cookies. Honestly, I didn’t think that they were going to be very good. But, once again, I was pleasantly surprised. They are so easy to make and they taste so good. Here’s how you do it!

All you need to make these cookies are peanut butter, honey, oat flour, baking soda and one egg.

The first thing that you are going to do is set your oven to 350 degrees and cover a cookie sheet with parchment paper.

Next, you use an electric mixer to blend together 1 cup of peanut butter, 1/2 cup of honey and 1 egg until it is smooth. This will take 1-2 minutes.

Once you have done this, it is time to make your oat flour. All you have to do is put 3/4 of a cup of regular oats into a food processor until it has a flour like consistency. You can use a sifter to get out of the larger pieces, but you don’t have to.

Once you have your oat flour add that, along with 1/2 teaspoon of baking soda to the peanut butter/honey mixture. Blend that together until it is smooth.

Once you mix everything together, it should look like this. I added chocolate chips and folded them into my batter for a little extra flavor. They are good with and without them though, so its up to you.

Then, you roll the dough into balls. Place them on your pan and press them down lightly with a fork. This will help them cook all the way through. Put them in the oven for 8-10 minutes. They will be on the soft side and they will harden a bit once they are cooled.

And that it! Now you have super yummy, and a healthier version of a peanut butter cookie. My whole family ate these and thought that they were really good. I would definitely recommend trying them.
